Watermelon Cake

For Grandma’s birthday, I wanted to make her a cake that had no fat or sodium. So I made her a watermelon cake.

First, I cut the ends off the watermelon making the cuts as straight as possible.

Then, I pushed a coffee can with both ends cut out into the watermelon to get a “cake” shape.

Next, I cut out a section of the rind and removed it from the coffee can.

The watermelon was just a little bigger than the coffee can, so I trimed off the extra.

With some help, I pushed the watermelon out of the coffee can.

I placed the watermelon cake onto a cake plate and decorated the base with pineapple rings held in place with toothpicks. I covered the ends of the toothpicks with cherries.

Then I cut watermelon and cantelope with small cookie cutters and put the shapes along with pineapple chunks and cherries halves onto skewer sticks. I used the skewers to decorate the rest of the cake.
